Noodle Salad with Sesame Dressing

One of our favourites here at the NutraMed offices, refreshing, extremely tasty and very affordable. You can vary the veggie amounts to suit and will make enough for 2-4.

What you will need:

1-2 cakes of your favourite noodles (each cake about the quantity of a 2 minute noodle packet) 
A good couple of handfuls of baby spinach
1/2 a cucumber cut into matchsticks (peeled or non-peeled)
1 Medium carrot cut into matchsticks
1 Cup of thinly sliced mint leaves
1 cup of thinly sliced basil
1 cup of thinly sliced onions (red or green)
1-2 cups of thinly sliced cabbage (red or green)
1/2 cup of salted roasted peanuts
Spring onion to garnish

Dressing:

1/2 cup of rice vinegar
1 Tablespoon of lemon, lime or orange juice
1 teaspoon of soy or tamari sauce
2 Tablespoons of sesame oil
3 Tablespoons of olive oil
1 clove of minced garlic

Instructions:

1. Cook the noodles according to the package directions and when they are done, drain, run them under cold water and set aside

2. Mix all of the dressing ingredients into a jar, shake to mix and set aside.

3. Mix the basil, mint and spinach and place in a bowl or plate and arrange to form a crater in the middle and place the noodles in the centre. Arrange the cucumber, carrots, onion and cabbage around the noodles leaving the top of the noodles exposed. Drizzle the dressing over the noodles and a little on the veggies. Top with the chopped peanuts and a little spring onions to garnish, sit back and admire and then tuck in.
